This is traditional Japanese sauce is made with sake, pickled plums and shaved dried bonito. Before soy sauce was invented, this was the most commonly used sauce for 250 years during the Edo period. Irizake brings out the flavor of many ingredients, and is mainly used a substitute for soy sauce, to compliment white fish sashimi, or mixed with fresh Egg yolk as a Salad dressing.
